Pistachio is a desert plant that can be grown in our areas (Bulgaria). The pistachio tree is resistant to different climatic changes. Prefers dry, not moist soils. The fruit has a whitish hard shell. The kernel is light greenish, with a very pleasant aroma and taste. The ripening of the fruits is about 10-20 September. Pistachio is rich in phosphorus, calcium and many other nutrients. The fruits are suitable for fresh consumption, thermal processing, and confectionery. They are very good for transport and handling. After harvest, the fruits are stored in dry, dark and airy areas for a long period of time.
